The anise flavor of fresh tarragon adds a new dimension to peaches, perfect for a quick sauce over broiled chicken or fish.

  • 1/2 cup melted, unsalted butter
  • 2 tbsps. lemon juice
  • 2 fresh peaches, peeled and thinly sliced
  • 1 tbsp. chopped fresh tarragon

Heat melted butter briefly with lemon juice, peaches and tarragon. Serve at once over grilled or broiled chicken breasts or fish fillets.

Makes enough for four servings.
