Gary Goldman of Toronto has wanted to commercially produce flavored nut- butters for the past four years. But he awaits an investor to make his dream happen. He probably knows as much about making peanut butter as any amateur.

Mr. Goldman’s secret to a succesful peanut butter is to start with the freshest nuts. Look for a store that has a fast turnover of stock. His secret for exquisite flavor is careful roasting.

  • 2 cups peanuts
  • 1 tbsp. vegetable oil, optional

Preheat oven to 325 degreesF. Clean peanuts very carefully, removing any dirty and moldy peanuts. Roast peanuts on baking sheet with frequent stirring until aromatic, about 20 minutes.

Put nuts into a blender or food processor and grind until smooth. Depending on the strength of your machine, the degree of roasting and the variety of peanut, the blend may remain crumbly. If this is the case, add oil. Scoop into a container. Keep refrigerated.

Makes one pound.
